What You'll Need:

  • Halibut: 1 pound, patted dry.
  • Jalapeño: 2 small or 1 large.
  • Shallot: 1, thinly sliced into coins.
  • Lime: 2 (zest and juice).
  • Orange: 1 (zest and juice).
  • Mayo: ¼ cup.
  • Sour Cream: ½ cup.
  • Cilantro: 1 bunch, picked.
  • Spices: 1 tsp each of garlic powder, onion powder, and black pepper.
  • Salt: To taste.

Let's Get Cooking!

Step 1: Preheat the Oven

  • Set your oven to 400°F.

Step 2: Marinate the Toppings

  • Thinly slice 1 jalapeño and the shallot into coins.
  • In a bowl, combine the juice and zest of 1 lime and 1 orange with 1 tsp of salt. Add the shallots and jalapeños to marinate while you prepare the crema.

Step 3: Season the Halibut

  • Pat the halibut dry and season lightly with salt. Set aside.

Step 4: Make the Crema

  • In a blender, combine mayo, sour cream, 1 seeded and chopped jalapeño (adjust the amount to suit your spice tolerance), lime zest and juice, picked cilantro, garlic powder, onion powder, salt, and pepper. Blend until smooth. Adjust seasoning as needed and set aside.

Step 5: Assemble and Bake

  • Layer the marinated jalapeños and shallots over the seasoned halibut.
  • Place the fish on an oiled baking tray.
  • Bake for 14–16 minutes or until the fish is cooked through (timing is based on a 1.5-inch thick piece of halibut).

Step 6: Serve and Enjoy

  • Plate the baked halibut with a generous drizzle of the crema. Serve with your favorite sides, like roasted vegetables or a fresh salad.
