  • 1Tbsp Butter: Optional for added flavor.

  • Prep Your Fillet: Pat salmon dry with towel then place on a large piece of foil laying on a sheet tray (foil should be big enough to wrap around fish with extra foil).
  • Essentials: Lightly drizzle fish with oil and season with salt.
  • Slice It Up: Slice mango into 1/4inch slices then shingle on top of fish evenly.

  • Bake: Preheat oven to 425 degrees Fahrenheit and then place fish in the oven for 8-12 minutes

  • Create Garnish: Cube tomato, chop cilantro and small dice red onion.
  • Mix It Up: Combine tomato, cilantro, onion, ½ lime juice, chili powder, oil, salt and pepper in a bowl and set aside.

  • Final Touch: Remove fish from oven and foil, top with tomato mixture and squeeze with lime juice.
