What You'll Need:

  • Smoked Salmon: 1/2 lb strips.
  • 1 Cup Cream Cheese: To hold everything together.
  • 2 Tbsp Sake, 1/2 Cup Soy Sauce, 2 Tbsp Sugar: For the perfect glaze.
  • 1/2 Tsp Chili Powder: To enhance the sauce.
  • 1/2 Tsp Grated Ginger & Garlic: For flavor and richness.
  • 1/2 Tsp Corn Starch: For the perfect garnish.

Step 1: Prep Your Ingredients

  • Prep: Temper cream cheese.
  • Garnish: Make a slurry using equal parts corn starch and water, mix well and set aside.

Step 2: Create Your Sauce

  • Simmer: Put sake in small sauce pot and cook for about 2 minutes or until reduced by half and alcohol is cooked off.
  • Dissolve It: Add sugar, soy, ginger, garlic, chili powder to the sake and simmer until the sugar is dissolved.
  • Mix It: While soy mixture is simmering add cornstarch slurry and whisk constantly until thick, then remove from heat. It should take about 20 seconds.

Step 3: The Garnish

  • Prep It: Cut scallion greens thinly. For extra touch place in ice water for 20 minutes to allow scallions to curl then remove form water and pat dry.

Step 4: Plating

  • Spread It: On a plate smear cream cheese evenly.
  • Layering On: Add chunks of smoked salmon.
  • Drizzle It: Spread the soy mixture over salmon, garnish with sesame, scallion and squeeze of lemon juice.

Step 5: Serve & Enjoy

  • Final Touch: Serve with your choice of crackers or toast.
