What You'll Need:

  • Ling Cod Fillet: 1 (12-16oz) fresh, wild-caught, and ready for seasoning.
  • 2 Cloves Garlic, 1 Shallot, 1 Tsp, Chili Flake, 2 Tsbp White Wine: For the creamy sauce.
  • 1 Cup Flour: Key to that irresistible crust.
  • 1 Cup Sun Dried Tomato: For added flavor & richness.
  • 2 Cup Cream, 2 Tbsp Parmesan: To get the right texture.
  • 1 1/2 Cup Spinach: For taste, texture and nutrition.
  • Olive Oil and Salt & Pepper: Essential for every dish.
  • 1 Lemon: A bright finish to elevate the flavors.

Let's Get Cooking!

Step 1: Prep Your Fillet

  • Staging: Pat fillet dry with a towel, season with salt, then lightly dusk ling cod with flour on one side and set aside.

  • Slice It: Mince garlic and shallot.
  • Chop It: Rough chop sun dried tomato.

  • Stove Top: Heat a pan on stove on medium high heat, once hot, add the oil then fish flour side down.
  • Create Crust: Once fish is golden brown transfer into 1” deep baking pan.
  • Simmer: Add garlic and onion to the pan sweat out on low heat until translucent.
  • Add Spices: Cook until aromatic, about 20 seconds.
  • Dissipate: Add wine and cook until liquid is gone.
  • Veggies: Add tomatoes and cook for 1 minutes.

Step 4: Bake

  • Oven: Preheat oven to 400 degrees fahrenheit.
  • Layer On: Add cream and mix completely.
  • Prep: Pour mixture in baking dish.
  • Toppings: Sprinkle parmesan on top of fish and sauce.
  • Bake: Place dish in oven for 12 -16 minutes.

  • Side Dish: Add spinach to the sauce in the baking dish until spinach is wilted and combined into the sauce
  • Final Touch: Remove from dish and place on top of the fish then finish with squeeze of lemon juice
